Andy and I love to cook. It’s something we both enjoy. What we both hate, is making the decision on what to eat for dinner. So yesterday while he was out playing in the woods with guns and camo, I made the decision on what we’d have for dinner. It was so fantabulous and easy, I thought i’d share it:
Easy Cheesy Chimichangas :
1lb (or more) of chicken tenders cooked with taco seasoning and chopped. I baked mine.
1 can of Rotel tomatoes (drained)
1 can of re-fried beans
1/2 pack of Fiesta Ranch dry seasoning
Flour Tortillas ( I used medium taco size)
Sliced pepper jack cheese
2 tbsp of melted butter
Mix the dry ranch seasoning in with the re-fried beans and spread evenly on each tortilla.
Mix the chopped chicken and Rotel tomatoes together and fill center of each tortilla.
Put pepper jack cheese on top of chicken mixture and roll up.
Place seam side down in baking dish and baste each one with the melted butter.
Bake in the oven at 350 for 30 mins.
Top with more pepper jack or cheddar and bake an additional 5 mins or until Cheese is melted.
