1 tsp of rosemary
1 tsp of thyme
1 tsp of paprika
Salt and pepper
3 boneless skinless chicken breast (cut in half)
12 cloves of garlic
1 cup of chicken broth
Add first 4 ingredients to a bowl and mix to combine.
Sprinkle chicken with seasonings both sides
Put just enough olive oil in the bottom of a non-stick oven proof frying pan to cover (I used our cast iron)
Once the oil is heated put chicken in the pan ( sear at least 2-3 mins on each side)
Then add the 12 cloves of garlic (whole if you have whole) I used already minced and it was fine too.
Add ¾ cup of the chicken broth
Put in a 450 degree oven for 10-15 mins until chicken is cooked through
Remove pan from oven and put chicken on a platter.
Add the remaining ¼ cup of broth and mash garlic up in pan.
Pour over the chicken once the garlic is mashed and sort of creamy.
I served this with green beans and roasted tomatoes (tossed w/ olive oil, salt & pepper). It was TO DIE FOR!
